Great Granola

Who has loads of time in the morning? Not me! But I know it is vital to start my day off with a healthy breakfast. Mix up a batch of this easy and versatile granola to have on hand for a quick breakfast.

Have it with almond or soy milk or top it with greek yoghurt and fresh berries to start your day off right!



2 cups organic rolled oats 1/4 cup Maple syrup, pure

3/4 tsp kosher salt

1 tsp pure vanilla extract

1/4 cup unrefined, virgin coconut oil

Additions (customize to your taste)

3/4 cup freeze dried berries or dried cranberries

1/2 cup dark chocolate chunks

1/2 cup almonds or other nuts or seeds

1/2 cup unsweetened coconut

Mix oats, Maple syrup, salt, vanilla, coconut oil, coconut and almonds. Bake at 325F on a baking tray lined with parchment paper for 15 minutes, flip mixture with a spatula and bake for another 15 minutes. Add berries and chocolate. Mix with your favorite yoghurt and enjoy!

Have fun with this granola recipe using your favorite additions. Store in an airtight container for up to 7 days.
