Who has loads of time in the morning? Not me! But I know it is vital to start my day off with a healthy breakfast. Mix up a batch of this easy and versatile granola to have on hand for a quick breakfast.Have it with almond or soy milk or top it with greek yoghurt and fresh berries to start your day off right!
2 cups organic rolled oats 1/4 cup Maple syrup, pure
3/4 tsp kosher salt
1 tsp pure vanilla extract
1/4 cup unrefined, virgin coconut oil
Additions (customize to your taste)
3/4 cup freeze dried berries or dried cranberries
1/2 cup dark chocolate chunks
1/2 cup almonds or other nuts or seeds
1/2 cup unsweetened coconut
Mix oats, Maple syrup, salt, vanilla, coconut oil, coconut and almonds. Bake at 325F on a baking tray lined with parchment paper for 15 minutes, flip mixture with a spatula and bake for another 15 minutes. Add berries and chocolate. Mix with your favorite yoghurt and enjoy!
